Fried Egg and Arugula Roll Up - Erin



This is my favorite and easiest breakfast item of the moment.  It takes barely more time than just frying an egg, but with so much more delicious of a result!


what you will need:

2 eggs (I only use one yolk)
1 medium tortilla
hot sauce (I use Aardvark)
salt and pepper
small handful of arugula



Heat up a small non-stick frying pan on the stove.  In the meantime, separate one egg and add the white to a small bowl.  Doing this into a small bowl beforehand saves the frustration of breaking the yolk in the pan later, which I have done many times.  Add the second full egg, and transfer both to the hot pan.  Salt and pepper it, then flip it over when it's ready, being careful not to break the yolk.  As soon as you flip it over, toss the tortilla in on top of the egg just to warm it up a bit.  When the egg has cooked to your liking you can just flip the pan over onto a plate, and everything should be in place! 



Break the yolk and spread it around with the back of a spoon, add some hot sauce and the arugula, then roll it up!  So easy, so delicious.
